[ GBB ] In 2011, the state announced GB5413.3-2010 "Determination of fat in infant foods and dairy products", clearly indicating that two methods can be used to detect fat. The first is the Mohs method, which is applied to the determination of fat in pasteurized milk, sterilized milk, raw milk, fermented milk, prepared milk, milk powder, condensed milk, cream, cream, cheese and infant formula. The principle is alkaline hydrolysis; the second method is the Gabor method , which is suitable for the determination of fat in pasteurized milk, sterilized milk and raw milk, and the principle is acid hydrolysis.

The principle of gabacuric acid hydrolysis is to add sulfuric acid to the milk to destroy the latex and the outer membrane of the protein covering the fat globule, and measure the volume after centrifuging the fat.

[Analysis step]

1) Add 10 mL of sulfuric acid (11.1) to the Gabor creamer, then carefully and accurately add 10.75 mL of the sample along the tube wall, so that the sample is not mixed with sulfuric acid, then add 1 mL of isoamyl alcohol (11.2) and apply the rubber. Plug the bottle down and wrap it in a cloth to prevent it from rushing out.
2) Shake vigorously to make a uniform brown liquid, let stand for a few minutes (the bottle mouth is down), set it in a water bath at 65 °C ~ 70 °C for 5 min, remove it and place it in a cream centrifuge to centrifuge at 1100 rpm. Min, then placed in 65 ° C ~ 70 ° C water bath water for 5 min (note that the water bath surface should be higher than the fat layer of the fat meter).
3) Immediate reading, which is the percentage of fat.
